BACANORA, TEQUILA OR MEZCAL?

The diferences among these three mexican beverages. 

Bacanora has a distinctive sweetness, smoky flavor and herbal aroma due to its handmade elaboration method in which underground ovens are used to burn the plant leaves. Altogehter, steam ovens are used for the production of the other beverages giving them a neutral flavor; 

There are different agave species. Bacanora can only be made from Angustrifolia haw agave, also known as yaquina agave. Tequila is made from blue agave plant or tequilana. Finally, mezcal can be made from 12 other different species;

Bacanora  is 100% agave. On the other hand, tequila and mezcal can contain cane sugar or other sweeteners.

Each one has its own Apellation of Origin, so the environment in which the agave plants are cultivated are different. Bacanora can ony be produced in 35 Sonoran towns. Tequila can only be made in Jalisco, Nayarit, Guanajuato, Tamaulipas and Michoacán. And Mezcal is produced only in Guerrero, Durango, San Luis Potosí, Zacatecas and Oaxaca.
